Production Process

Livestock and Slaughter House

The livestock entering the slaughter house come from both our own cattle farms, and from a limited number of carefully selected local suppliers. The animals are slaughtered in state of the art slaughter houses, located close to our cutting plant. All the necessary control mechanisms and sanitary regulations are carried out in accordance with the destination of the product. The resulting half and/or quarter carcasses are transported by our own fleet of thermal trucks to guarantee they are delivered in perfect condition.

Elaboration and Quality

Once in our plant, the system of traceability begun in the slaughter houses is continued. In this way each herd of cattle is monitored on an individual basis until it reaches the final stage of finished product, where it carries the reference number of the herd from which it was obtained. This is part of the firm's quality policy, as are such tools as HACCP, SSOP and GMP, all of which are supervised by the Argentine Farm Produce Board of Health (SE.NA.S.A).

Production Capacity

The plant itself is a 750m2 cutting plant with a freezing facility, manned by a team of 45 operators. It has a fleet of thermal trucks and livestock trucks. Our production capacity is 80 carcasses per shift, representing some 530 tons of processed meat per month. Our production amounts are for only part of our activity, a significant quantity of beef is being sold in the form of half carcasses.
